Squash stores for a long time and provides us with the needed vitamins in Winter. We often roast a squash on the weekend and use it throughout the week for various dishes and baked goods. We use it to make waffles, muffins, scones, gnocchi, and soups and other dishes. Whatever we don’t end up using gets placed in the freezer. Our two little dogs love squash for a meal with rice and often wait with begging faces while they smell it baking in the oven. It is a nice way to offer them fresh food as an occasional alternative to their dried kibble.
It makes their coats shiny and provides live food full of carotene and other super vitamins.
See our list of organically grown heirloom winter squash on our “In Season” page. We have some fun and interesting varieties that suit various dishes and preparations.
